Day One: A Rosemary Truffle Fries Hug

Hey, loves. So, as you know, yesterday was a pretty rough day for a lot of us. I spent the first half of the day crying and watching Modern Family reruns, and the second half channeling my energy into a positive re-direct, including writing this article called Seven Ways to Create a Positive Path Forward. (thanks for all the love on that article, by the way - it was deeply appreciated)

I've decided I'm going to be part of a beautiful ripple effect of BIG HUGE LOVE AND KINDNESS that I'm seeing from others around me. So many people have been spurred into positive action, and are choosing to sprinkle kindness everywhere in greater amounts than ever before, and it's deeply moving and gorgeously beautiful to see. (more on that tomorrow)

So part of that ripple effect is my ONE WEEK OF VIRTUAL HUGS on my blog. For the next week, each day I'll be sharing something that will hopefully lift you up in one way or another, and feel like a warm hug. If you're so moved, please pass it on.

So, after spending many hours writing that blog post yesterday, I've decided to start today off with food. Two weeks ago, I stayed with a friend in MN while I was doing work events, and she was like my own personal angel. She mentioned how much she loves truffle fries, so I decided to create a healthy take on them as an extra thank-you for her. (Thanks, Paige!!!)

Rosemary Truffle Fries

10 oz. potatoes (about 3 small red potatoes), cut into fry shapes (2 cups cut pieces) 
1 teaspoon garlic granules (often mis-labeled as garlic powder - you want the kind that looks sandy, not powdery)
2 teaspoons olive oil
1 teaspoon dried rosemary

1 additional teaspoon olive oil
1/2 teaspoon black truffle salt (heaven in a jar - my recommended brand is here, scroll down til you see it)
2 large cloves garlic, minced or pressed
Additional dried rosemary as desired (about 1/2 teaspoon)
 

1. These can be made in an air fryer or oven. If using an oven, preheat to 400 F.

2. In a medium bowl, toss the potato slices with the garlic granules, 2 teaspoons olive oil, and one teaspoon rosemary. Bake in a single layer on a large baking sheet (or in your air fryer tray) for a total of about 25 minutes, turning once mid-way through.

3. Once the fries are golden-brown and tender, remove and place back in the bowl. Add the remaining oil, fresh garlic, and additional rosemary and toss well. Serve immediately.

Serves 1-2; GF; SF; Blue (according to the health guidelines in my books)
