One Minute Vanilla Chia Pudding

Yep. One measly minute. That’s all it takes to throw this tasty, nourishing pudding together!
Of course, it does have to chill in the fridge to thicken (for more than a minute), but that’s the
price you pay for fabulousness. Recipe from FOOD LOVE.

2 cups almond milk, unsweetened (plain or vanilla)
2 teaspoons vanilla extract
1/3 cup chia seeds, preferably black (the darker the seeds, the more nutrients!)
3 tablespoons maple syrup
Optional: Fresh berries of your choice

1. Place all of the ingredients in a mason jar (or other airtight container) with a tight-fitting
lid. Shake very well.
2. Place in the fridge for a few hours, or until thickened. Shake or stir very well and enjoy.
If desired, top with fresh berries just before serving. This will store, refrigerated in an
airtight container, for up to a week.
