Peanut Butter Oat Energy Cookies
As many of you know, I'm a little obsessed with raw energy cookies. From my Raw Cinnamon Rolls and Dark Chocolate Mint Energy Cookies (in Radiance 4 Life), to the Zesty Orange Chocolate Energy Cookies in my newest book (FOOD LOVE), I absolutely LOVE this kind of treat. WHY?? Because ... they have so much flavor. They're easy peasy breezy to make (no cooking required!). They satisfy the sweet tooth, all while giving your body lots of nutrients (and none of the junk). They're the perfect on-the-go energy food. So many reasons to love them!

Peanut Butter Oat Energy Cookies
2 cups rolled oats (not instant)
1/2 cup dry roasted organic peanuts (unsalted)
1/2 cup (packed!) raisins
1/4 cup smooth unsweetened peanut butter (I use Trader Joe's which has a little sea salt added)
1/4 cup pure maple syrup
2 tablespoons EACH: water and chia seeds
1 tablespoon vanilla
3/4 teaspoon pink salt (NOTE: I use pink Himalayan salt, which is slightly coarse. If you're using a very fine salt, you may need to use a little less)
In a food processor, place all of the ingredients and blend until sticky. You'll know it's done blending when it balls up and starts to stick together. You want to retain a little texture (as shown in the picture), but not so much that you can see whole raisins and peanuts, etc.
Remove the mixture in tablespoonfulls, and roll into balls with your own human hands. Store in an airtight container in the fridge. They'll keep for several weeks or longer, and are the perfect travel staple. Enjoy!!
