As promised, I wanted to share a few more recipes with you before my next book is released on June 18th! These easy peasy spring rolls are a favorite of mine - in fact, I just had two with my lunch today! Because they’re such a go-to item at our house, I like to make up a big batch of the filling and keep it on hand (it lasts about a week). Then, it’s easy to roll up a few spring rolls to air-fry at a moment’s notice!
You can vary the veggies in this (my daughter prefers them without the shiitake mushrooms, but I say they’re the best part!) and serve plain, or with an Asian dipping sauce. When I’m feelin’ lazy (which is often), I serve these with some plain old chili garlic sauce, but that’s probably a bit too spicy for most people! Some less intense sauce ideas are: a sweet chili sauce, sweet and sour sauce, peanut sauce, or just a homemade chili-tamari-garlic-lime sauce.
Let me know what you think if you try these, as well as what sauce you opted for!
p.p.s. For those of you familiar with my “color codes” you’ll be happy to know that these are a “Green!”
Thanks for stopping by today, and I hope you love these spring rolls as much as we do!! :)
