Blackberry Chia Pudding
I’ve created a few variations of chia pudding, and this is one of my favorites. The cashews make it creamy, and a bit more filling, which makes it a perfect mini-meal snack. This recipe is from my most recent cookbook, Healthy Vegan, Happy Body, and you can also have fun trying different fruits in place of the blackberries. We also like strawberries, raspberries, and blueberries in this one.
