Here’s another recipe from my newest book, Vegan Mediterranean Cookbook, and it’s such a favorite! Yeah, I know - I say that about a lot of recipes. But also, I always mean it!! I get too excited about good things!!
I actually remember saying something was “my favorite!” back in my teens, and having someone call me out on it.
“You can’t have more than one favorite!” He said.
Luckily, I ignored his advice, and decided it was OK to be really excited about more than one thing, enough to say I had lots of favorites.
What passes for a “favorite” in my world? Well for starters - it has to be something with all of the following qualities:
2. Easy to make (Yes I write cookbooks, but no I don’t always want to be in the kitchen!! I want to EAT!)
3. Lots of nutritious ingredients, and very fresh tasting
4. Majorly crowd-pleasin’
OK so how about we skip right to this favorite dish of mine, and you can see for yourself??? :)
P.S. For a gluten-free version, you can make this with quinoa instead of orzo. It’ll still be delicious! Please let me know what you think once you try this - I always love hearing from you! :)
