Ful Medames
This simple bean dish is an absolute favorite in our house (and even our extended family!) because it’s soooo easy to make, flavor-full, and nutrient-dense. It goes wonderfully along with sides such as hummus and pita, soup, or potatoes of any kind, or stands in as a light, nourishing main dish.
We always make up a triple batch because it goes so fast in our house! Be sure to use fresh ingredients (such as lemon juice and garlic), as that’ll make all the difference in flavor and nutrition.
I really enjoy serving these as part of a Mediterranean feast-type spread, which might also include falafels (or a falafel salad), dolmas, hummus and/or babaganoush, and more. Oh, and I also LOVE a good garlic dip, and this recipe is on my list to try! What would be included in your spread???
This is a recipe from my book, Vegan Mediterranean Cookbook (available HERE) and I hope you love it as much as we do!!
Here’s the recipe:
For those of you who follow my color-coded system (available in my books and via my coaching programs), this recipe is a GREEN (yay!), and is also gluten-free and soy-free. Enjoy!!! :) xo Tess
