Have you ever had vegan cheesecake? It can be mind-blowingly good, which generally comes as a shock to people who’ve only had the dairy-based variety. If you have any of my other cookbooks, you may have even made some at home. Vegan cheesecake is surprisingly easy to make, extraordinarily delicious, and can even be healthy when made with mostly raw, whole food ingredients.
